In much the same way I noticed books and pizza popping up everywhere, there seems to have been a flurry of pancake activity lately. Not that I blame anyone of course.
Before we get to any serious recipes, check out this scented pancake charm I ran across on Serious Eats. How freaking cute is that!?! You can wear it! I'm in love. However, apparently the pancakes are sold out. Don't despair, there are several other enticing charms for those interested. I'm a big fan of the PB&J.
This awesome photo is of Scotch Pancakes with Strawberry Sauce. I ran across this on Open Source Food, the same great site which posted the likes of an easy pancake batter and the savoury pancake...something that caught me off guard.
To go from savoury pancake to a bit healthier, check out Vegan.com's Pumpkin Buckwheat Pancakes of to add a dash or posh, Gwyneth Paltrow's vegan pancakes might do the trick. Buckwheat can be a great thing, especially for those who need to go gluten free.

And of course if you try the above recipes and really like them, you can always attempt the food challenge presented at Rick Jones' cafe in Seiad Valley, California. Eat five inch-thick pancakes in less than two hours or foot the $12 bill. Honestly, of all the food contests I've ever read about, I seriously think I could do this. No carbonated beverages allowed. I'm not kidding. I've thought long and hard about this. I don't eat meat, so there goes that. I had a gum surgery last year and the roof of my mouth is now super sensitive to cold so ice cream is out. But this, this I think I could do.
Come on California.
