Health Benefits of Sugar Cane...?

I found an interesting article on The Food Site about the health benefits of sugar cane...a topic I had never really thought of. I often skim over these kinds of things, but for some reason I stopped to read this one.

According to The Food Site, sugar cane helps digestion and is high in magnesium, calcium, and vitamin B2...hmmm....this is interesting. Kind of like how a lot of people are into coconut oil for various reasons and I never knew about that either.

I'm having trouble finding more information on sugar cane...real information on health benefits. Anyone have any suggestions?

Basically, the less refined the better (more vitamins/minerals). Sucanat, rapadura, and muscovado are the versions I'm most familiar with, but you may have seen turbinado (Sugar in the Raw) or demerara in the supermarket. I don't remember why the first 3 are better, but I'll try to find something to back it up. I think turbinado and demerara are more refined (like the same as white sugar but not bleached, maybe?).

Also, I LOVE coconut oil. It's -- drum roll -- a healthy saturated fat. The less refined, the better here, too, although it can be really expensive. I found some in bulk at a health food store here, though, really cheap. It should say cold-pressed or expeller-pressed and should NOT be hydrogenated.

Yeah, phytic acid is why you soak beans, grains, and nuts. It makes the nutrients more available and it also makes them more digestible.

I learned about the phytic acid thing from a book called "Nourishing Traditions" -- I don't agree with everything in that book, but I did some research on phytic acid and made sense. Let me know if you need any more sources.
