Alright I feel like poop and am not going to work where running for three hours will make me feel more like poop, but that doesn't mean I'm going to let the day go to waste. One accomplishment will be to get a real Tear Down Tuesday done. I've decided we should talk about oats. Why? Oatmeal is my current vegan breakfast of choice oats are an ingredient in many delicious dishes!
For a brief overview, oats are a great source of fiber, selenium, and manganese. We all know how much I love fiber. Additionally, they are also a good place to get vitamin B1, magnesium, protein, and phosphorous.
Being a good source of soluble fiber, oats may help prevent heart disease by lowering LDL cholesterol. I did a research paper on soluble fiber a couple months back...I found what I expected to find...soluble fiber is good for your heart. Oats also help to control blood sugar. The American Dietetic Association suggests getting more fiber in your diet by adding oats to things like meatloaf, bread, and cookies.
So there we go. Throughout the week I would love to have your input on oatmeal as well as recipe ideas, but either way I'll provide more information!

You know how I LOVE to play devil's advocate, so here we go... :)
My kids eat oats, so I don't think they're bad. But I don't think I fare so well on them -- I have a wheat allergy, which is not as bad as gluten intolerance, but I'm still trying to abstain from anything with gluten. Like your veganism, I'm still not there 100%. Oats are tricky for people with gluten sensitivity. Gluten-free oats are available, but VERY expensive. Oats do not contain gluten, but commercially they get cross-contamination from wheat products (which is why "gluten-free" oats are available).
Oats are also high in phytic acid -- a chelator of important nutrients. I can't remember where I saw this, but I thought that rolled oats aren't so good, but oat groats (crunchier -- the texture of Irish Oatmeal) are the way to go. You can soak them overnight in water with a little apple cider vinegar added, and the acidity will draw out the phytic acid. I haven't done this, though, because we hardly ever have oats.

You confirmed it for me. I'll continue to eat oatmeal every morning even though I have to pour on the honey and sprinkle the salt.

Oats in pancakes! If you aren't gluten intolerant, you can make wholegrain pancakes and add oatmeal to the mix--it's really tasty. Also, granola bars!
